Rhubarb Crisp is a nice sweet dessert that is kind of crunchy on top. It is one of my favorite desserts. Here is the recipe we use to make it:

Before my dad mowed over our rhubarb plant, we would make Rhubarb Crisp* when it was ripe. I have lots of good memories of accidentally pulling up unripe rhubarb and being taught the difference. Good times. Rhubarb Crisp is a nice sweet dessert that is kind of crunchy on top. It is one of my favorite desserts. Here is the recipe we use to make it:
Ingredients:
8 cups rhubarb, cut into 3/4-inch pieces 1 cup sugar
1/4 cup flour
1/2 teaspoon cinnamon
1 cup flour
1 cup brown sugar
1/2 cup rolled oats
1/2 cup melted butter
Directions:
Dough
- Combine rhubarb, sugar, flour and cinnamon and put into an 8″ x 8″ x 2″ glass baking dish.
- Combine flour, brown sugar, rolled oats and melted butter and sprinkle streusel over rhubarb mixture.
- Bake at 375 °F for 35 minutes.
